Hearty sausage hotpot

Instead of the traditional lamb hotpot why not try our winter warming Hearty sausage hotpot



Ingredients:

  • 1 tbsp (tablespoon) olive oil
  • 12 good quality thick pork sausages
  • 2 carrots, finely sliced
  • 1 onion, sliced
  • 1 celery stick, finely diced
  • 1 clove garlic, crushed
  • 2 x 400g cans chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tsp (teaspoon) dried oregano
  • salt and ground black pepper
  • spaghetti and grated cheese, to serve

Method:
  1. Place the oil in a big pan (with a tight-fitting lid) over a medium-high heat.
  2. Cut each sausage into three and fry gently in the oil until golden in colour. Stir sparingly for them to be crispy, expect to take around 10 minutes to cook.
  3. Once the sausages are ready add the carrots, onion, garlic and gently allow to simmer for a few minutes. Pour in the tomatoes and add the tomato puree and oregano.
  4. Season with a little salt and ground black pepper, and continue to simmer.
  5. Turn down the heat and allow to cook for an hour, or until the vegetables are tender, and the sauce is thick and rich. Serve over spaghetti and top with grated cheese.
