Why not try our chocolate brownies as an after study treat
Ingredients
- 6 Tablespoons of Butter, diced
- 400g Chopped White Chocolate
- 3 Eggs
- 1/2 Cup Superfine Sugar
- 2 Teaspoons of Vanilla Extract
- 3/4 Cup Sultanas
- Grated Rind 1 Lemon, plus 1 Tablespoon of Juice
- 1 3/4 Cups of All Purpose Flour
Method
- Pre heat the oven to 190C/375F/Gas 5, Grease and line a shallow baking pan (28 x 20cm / 11 x 8in) with parchment paper.
- Put the butter and 300g of the chocolate in a bowl and place over a pan of gently simmering water, stirring often until melted.
- Remove from the heat and beat in the eggs and the sugar, then add the vanilla, sultanas, lemon rind and juice, flour and the remaining chocolate.
- Tip the mixture into the pan and spread into the corners.
- Bake for 20 minutes until lightly risen and the surface is only just turning golden.
- The centre should be slightly soft then leave to cool in the pan.
- When cool cut the brownies into small squares and remove from the pan.
