Sweet and Sour Chicken

Something sweet and sour for you to try





 Ingredients

  •  2 chicken breasts
  • 3 tablespoons of dry-roasted peanuts
  • 1 teaspoon of dry crushed chillies
  • 125g of tinned pineapple in natural juice
  • 125ml of pineapple juice
  • 3 tablespoons of lime juice
  • Light soy sauce
  • Rice wine vinegar
Method

  1.  Add the peanuts and chili flakes into a blend till it’s mostly ground.
  2. Then coat your chicken with the ground peanut mixture.
  3. Heat a wok or frying pan over a high heat with a little oil then, add the chicken and cook for 5 minutes each side.
  4. In a blender blend the pineapple chunks with the juice. Add this to a pan and heat under a medium heat, then add the lime juice. (You can also add soy sauce and rice wine vinegar to taste at this point).
  5. Then leave for the sauce to reduce.
  6. Once the chicken is ready, serve immediately along side rice or salad leaves.
