Something sweet and sour for you to try
Ingredients
- 2 chicken breasts
- 3 tablespoons of dry-roasted peanuts
- 1 teaspoon of dry crushed chillies
- 125g of tinned pineapple in natural juice
- 125ml of pineapple juice
- 3 tablespoons of lime juice
- Light soy sauce
- Rice wine vinegar
- Add the peanuts and chili flakes into a blend till it’s mostly ground.
- Then coat your chicken with the ground peanut mixture.
- Heat a wok or frying pan over a high heat with a little oil then, add the chicken and cook for 5 minutes each side.
- In a blender blend the pineapple chunks with the juice. Add this to a pan and heat under a medium heat, then add the lime juice. (You can also add soy sauce and rice wine vinegar to taste at this point).
- Then leave for the sauce to reduce.
- Once the chicken is ready, serve immediately along side rice or salad leaves.
