Fancy something a bit exotic? Let your taste buds try this Mediterranean dish

Ingredients:
- 4 Chicken thighs
- 1 Teaspoon basil
- 1 Onion (cut in wedges)
- 2 Tablespoons olive oil
- 3 Large potatoes (cut into 3cm cubes)
- Salt and Pepper
- 1 Clove garlic (finely chopped)
- ½ Mug water
- 3 Tomatoes (cut into ¼)
- 1 Chicken stock cube
- 12 Olives (chopped)
- Paprika to sprinkle over
Method:
- Preheat the oven to 180 fan oven/200/Gas 6.
- Put all the ingredients, except the stock and paprika, in a casserole dish. Distribute the oil evenly and arrange the pieces so that the skins of the chicken will brown. Add the stock and sprinkle the casserole with paprika.
- Put in the oven for 45-50 minutes until the chicken is browned and cooked through. Test one piece to make sure.
