Just liek the title suggests. Easy.

Ingredients:
- 1 tablespoon of vegetable oil
- 1 choped onion
- 1 choped garlic clove
- 3 to 4 skinless chicken breasts chopped into bite sized pieces
- 1 tablespoon of medium curry powder
- 1 tea spoon of tomato puree
- 1 tea spoon of brown sugar
- 300 ml of chicken stock
- Boiled rice
- Mango Chutney
Method:
1. Heat the oil in a large shallow pan or saucepan. Add the oniopn and garlic and fry gently of 3 to 4 minutes until softened.
2. Add the chicken and fry gently for a further 3 – 4 minutes.
3. Stir in the curry powder, tomato puree and sugar, gently mixing togetehr
4. Pour in the chicken stock, give one last stir and bring to the boil. Reduce to a gentle heat then cover and cook for 40 minutes.
5. Serve with boiled rice or naan.
