Lamb Chop with Crispy Garlic Potatoes

Fancy some succulent lamb chops? How about some crispy garlic potatoes too


Ingredients:

  • 2 Tablespoons mint sauce
  • 8 Small lamb chops (serves 4)
  • 3 Medium potatoes, peeled and cut
  • 2 tablespoons garlic-flavoured olive oil
  • 1 Tablespoon of olive oil
  • Salt and pepper
  • Steamed green beans to serve

Method:
  1. Spread the mint sauce over the lamb chops and leave to marinate while you prepare the potatoes.
  2. Cook the potatoes in a pan of lightly salted boiling water for 2 minutes until just starting to soften.
  3. Drain, tip back into the pan, season and toss through the flavoured oil.
  4. Meanwhile, heat the olive oil in a large frying pan and fry the chops for 4-5 minutes on each side until just cooked, adding a splash of boiling water to the pan to make a sauce. Remove the chops and sauce from the pan and keep warm.
  5. Add the potatoes to the pan and fry over a medium heat for 10-12 minutes until crisp and golden.
