Fancy some succulent lamb chops? How about some crispy garlic potatoes too
Ingredients:
- 2 Tablespoons mint sauce
- 8 Small lamb chops (serves 4)
- 3 Medium potatoes, peeled and cut
- 2 tablespoons garlic-flavoured olive oil
- 1 Tablespoon of olive oil
- Salt and pepper
- Steamed green beans to serve
Method:
- Spread the mint sauce over the lamb chops and leave to marinate while you prepare the potatoes.
- Cook the potatoes in a pan of lightly salted boiling water for 2 minutes until just starting to soften.
- Drain, tip back into the pan, season and toss through the flavoured oil.
- Meanwhile, heat the olive oil in a large frying pan and fry the chops for 4-5 minutes on each side until just cooked, adding a splash of boiling water to the pan to make a sauce. Remove the chops and sauce from the pan and keep warm.
- Add the potatoes to the pan and fry over a medium heat for 10-12 minutes until crisp and golden.
