Mediterranean Chicken

Fancy something a bit exotic? Let your taste buds try this Mediterranean dish

Ingredients:

  • 4 Chicken thighs
  • 1 Teaspoon basil
  • 1 Onion (cut in wedges)
  • 2 Tablespoons olive oil
  • 3 Large potatoes (cut into 3cm cubes)
  • Salt and Pepper
  • 1 Clove garlic (finely chopped)
  • ½ Mug water
  • 3 Tomatoes (cut into ¼)
  • 1 Chicken stock cube
  • 12 Olives (chopped)
  • Paprika to sprinkle over

Method:
  1. Preheat the oven to 180 fan oven/200/Gas 6.
  2. Put all the ingredients, except the stock and paprika, in a casserole dish. Distribute the oil evenly and arrange the pieces so that the skins of the chicken will brown. Add the stock and sprinkle the casserole with paprika.
  3. Put in the oven for 45-50 minutes until the chicken is browned and cooked through. Test one piece to make sure.
